  • 1 Whole Chicken
  • 200g Bulgar Wheat
  • 100g Feta Cheese, cubed
  • 100g Whole Pitted Olives, Black, Green or Mixed
  • 80g Pomegranate Seeds
  • 200g Baby Beetroot, cubed
  • Fresh Tomatoes, we used mixed Cherry Red, Orange, and Pink Temptation, halved or quartered, depending on size
  • Half a cucumber, cut in half lengthways, deeseeded and then cubed
  • 30g Thyme, chopped
  • 15g Mint, chopped
  • 15g Parsley, chopped


  1. For the Chicken
  2. Place the Whole Chicken onto a baking tray and rub with olive oil
  3. Chop the Thyme and rub onto the chicken skin
  4. Roast Chicken according to weight or cooking instructions - usually about 90 mins.
  5. Once the chicken is cooked, leave to rest while you assemble the Bulgar Wheat salad
  6. For the Bulgar Wheat Salad
  7. Place the Bulgar Wheat into a pan and cover with water. Bring to the boil and then simmer for about 8 minutes until tender
  8. Drain bulgar wheat and then run through cold water to cool, drain and place into a large bowl
  9. Add the cubed Feta, Whole Olives, Tomatoes, Cucumber & Beetroot
  10. Add the chopped Mint & Parsley
  11. Stir all ingredients through
  12. Serve alongside your Roast Chicken & sprinkle the pomegranate seeds on top
